The Story
Sourdough bread is itself one of humanity's oldest foods. Before commercial yeast existed, every leavened bread relied on wild fermentation — flour and water left to capture ambient yeast spores from the environment. The long, slow fermentation also breaks down phytic acid in the grain, making sourdough more nutritious and easier to digest than commercially yeasted bread.
Hummus — the Arabic word simply means "chickpeas" — has been eaten across the Levant and Middle East for at least 800 years. Chickpeas were among the first crops ever domesticated by humans, with archaeological evidence from the Jordan Valley placing their cultivation at around 10,000 years ago. Ground into a smooth paste with tahini, lemon and garlic, they create a protein-dense spread that has become one of the most popular foods in the world in the 21st century.
